I Have Reset My Ipod Touh 4th Gen To Factory Settings But My Videos And Apps Aren’t There?

I reset it and chose to restore from itunes. My pictures and music have gone on ok but all my apps and none of my videos are there? How do I go about putting them back on?
Also, I backed up to icloud so how do i get all my things off icloud back on to my ipod?
