I have a coffee maker that is 1250 watts. I just learned that the current AVR that I am using is only designed is only 500 watts and now I have another AVR that says 1000 VA.

NO ! 1250W is bigger than 1000VA.
I don’t know what an AVR is but you need 1250 watts minimum at 110 volts.
1000 VA is a measurement of apparent power. Apparent power is made up of real and imaginary power. Even if you assumed that you had a perfect system (meaning that 1000 VA was entirely real power) you would only have 1000W. So, I would say no, that isn’t enough to power your coffee maker.
I believe AVR (auto voltage regulator) only monitors the voltage level and keeps it constant so if you can find one that allows over 1250 W then it should work.
